Our Mission
Full Mind is dedicated to helping all people find peace with their body and mind by offering evidence-based nutrition information, along with compassionate, inclusive, and informed nutrition therapy and counseling. We adopt a fundamental long-term health approach and debunk the complexities and falsehoods of modern day diet culture. Our mission strives to support individuals and communities in reframing what "health and wellness" looks like by promoting:
- Progress over perfection. People can enjoy their favorite foods, eat until they are satisfied, and take rest days, while still making informed, well-rounded food and movement choices.
- Small, easy, steps lead to big change. Sustainable, life-long, changes are still achievable, even when honoring one's existing routines and habits.
- You don't need to be "sick" or "ill" to seek support. Promoting longevity and healing is possible, even before health issues develop or progress.
- People don't need to change their body to fit into a certain standard. As humans we might not always love everything about ourselves, but we have the ability and decision to appreciate our bodies for allowing us to wake up each day. ​

Health at All Sizes
Health should not be measured by a specific number on the scale, the calories you consume, or the steps you take. Relying on these metrics to assess your health can leave you feeling stuck. For instance, if your goal is to walk for 40 minutes daily but you only manage 25 minutes due to time constraints, you still made an effort that benefits your health. Focusing too much on a single number on the scale can lead to emotional ups and downs, as weight fluctuates daily due to various factors like diet, hydration, and temperature. True health encompasses more than just weight loss and appearance; it involves nurturing your mind, body, and spirit.

Body Neutrality
To truly embrace life, it's essential to be the person you are, rather than striving to change yourself or conform to societal standards. Pursuing an identity that isn't yours undermines the unique individual you are. It's normal to have concerns about body image and experience emotional highs and lows, but it's crucial not to let negative thoughts dictate your self-worth. While body positivity can be challenging, shifting towards body neutrality encourages acceptance and gratitude for your abilities and what your body offers beyond mere appearance.

Holistic Approach
Our care adopts a holistic approach by emphasizing that the mind and body are interconnected; what impacts one also influences the other. Reframing health and wellness begins by shifting the focus away from physical appearance and initially prioritizing mental and emotional well-being. If you're facing challenges in caring for your emotional health, it's likely that your physical health will also be affected and vice versa.

Intuitive and Informed Living
Full Mind redefines eating with intention. Our staff recommend being intuitive and trusting your body, while also staying informed and utilizing science-based evidence. In other words, finding a balance between both eating emotionally and eating logically so that all aspects of health (including physical and mental) are addressed and supported.

Kathryn Marie Eddingsaas, RD, CD,CEO
Kathryn's journey as a registered dietitian began after struggling with an eating disorder that started in 2015. Looking back, she stated that her eating disorder thrived on her type A, perfectionistic characteristics. After struggling with anxiety and depression for years, she had a newfound interest in health, wellness, losing weight, and eating "clean". She found motivation in the gym, and she felt her persistence was unmatched. However, the habits continued and began to turn into compulsions, where missing a workout would cause panic attacks or could ruin an entire day. Kathryn read online about nutrition and health standards and she was convinced that there was no such thing as "too healthy". Her perspective soon changed when she began to experience significant side effects of prolonged malnutrition.

Kathryn emphasizes the experience is quite challenging and unique and stated, "your physical cravings for food can become so strong after not providing your body with enough nutrition. Giving up the control over what I ate and how much I ate was terrifying, but one-hundred percent necessary," She emphasized that it was not a flawless recovery but a couple key values kept her motivated:

After a year or two of healing her relationship with food, she attended college at Mount Mary University for Dietetics . She studied from 2017-2021 and graduated with a Bachelor's of Science, Dietetics. She completed 1200 hours of supervised practice while interning full-time at businesses including: Aurora Psychiatric Hospital, Froedert Hospital, Treo Wellness, and Milwaukee Center for Independence. Shortly after graduating, she started designing Full Mind and this website to begin sharing what she learned with the world.
Next, came the national registered dietitian exam and getting certified in Wisconsin. Since becoming a fully registered and certified dietitian in 2023, her experience is primarily with clinically diagnosed eating disorders (AN,BN, BED, OSFED, ARFID, PICA, UFED), as well as non-diagnosed disordered eating, malnutrition, body dysmorphia, and more.


In addition to people who suffer from eating disorders, Kathryn believes that all people can benefit from having access to evidenced-based nutrition sources. She stated, "there are many of us quietly suffering from eating disorders and toxic health journey's because of misinformation, diet culture, and extremely misleading health standards. Over the Covid-19 pandemic, eating disorder behaviors (including social isolation and caloric restriction) have continued to climb." Full Mind was created shortly after the beginning of the pandemic in 2021 to provide accessible, affordable, evidenced-based information to the public at large. Full Mind plans on continuing to provide free evidenced-based nutrition blogs and resources, while also initiating 1:1 care virtually to reach a larger audience. ​
